How to setup 6 Instances of MG2 where each string gets it’s own channel?
looks like several ways, Separate Audio + MIDI track, Combined Multi instrument, not sure how to make it work.

Also, is it better to have MG2 Host the Instrument?

You might get better responses if you typed out MIDI Guitar 2. I had to Google to see what you were asking about.

I'm not familiar with the product at all, but with other virtual instruments that support multiple audio outputs, you select All Synth Outputs when inserting the instrument:
