Pretty sure they've used backing tapes at times (fair play - no criticism) so I don't feel this is a huge leap.

Yep. There's a barely audible chorus-y effect at very high settings, but I can get that and more with more generic plugins.

The B and the E are the ones that stay in tune most though. G is worst (but badly wound - my bad for not checking and making an assumption) but the low E and A aren't amazing (IMHO).

Create a new track view widget preset that hides the input gain?

Barely does anything to audio. Meh.

The environment hasn't changed, but it's not in an ideal environment (if that makes sense - it's been this way for years). So that may be a factor. Also what might be a factor is my inability to actually look closely - I can "remember" restringing and it being OK, but when I looked at the G string last night (no sniggers at the back, please), it's truly awfully wound. So that's probably my problem. Don't I feel stupid? Seriously, I appreciate the replies here and I've learned a lot (including the luthier's knot, which I'd actually been doing by chance, just not very well!).

I haven't (actually getting to a guitar shop is tricky). Not that I've tweaked anything on it apart from electronics (and that was done many, many years ago before this problem started).

Rangebooster is excellent (and free of course too!). The presets, however, are a bit "meh" in my opinion.

No trem. Mainly G string, but all barring top B and E aren't great. G can go noticeably flat after only a few minutes of playing (the others take longer). The strings are definitely well stretched and played in. The guitar is about 20-25 years old (eek...doesn't time fly?) and has been getting worse over the last year or so, which is why I thought tuners might be wearing in some way (and if I'm going to replace them, why not get locking ones anyway?).

The SE isn't that high end (funnily enough, I much prefer how it plays to a high end PRS I tried!). I do think my knotting may be sub-optimal in some cases, but I don't think it's awful on all the strings!

The same happens if you load a project from Start Menu/Taskbar Sonar icon (right click to view recent files and pick one).

As has been said many, many times, this is wrong. The display is bogus (I think it displays the first ASIO driver), but the correct value from the active device is used for timing.
