The impression I got of the Play series are that they are pick-up-and-play instruments: good for inspiration/putting ideas down quickly.

As far as I understand, MODO Bass is fully modelled; for MODO Drum, the drums are modelled (or mostly are) but the cymbals are sampled. I'm open to correction if I'm wrong.

Programming by mouse - finger drumming is on my to-learn list.
Maybe the simple truth is that I'm 'hitting' the main drums too hard in relation to the cymbals: I'm not a real drummer, so don't know the 'velocities' that they would play at.

Not really - I (personally) found it to be the case on most of the kits.
If the mic'ing is typical, I probably just need better technique for mixing drums - I find that when I try to bring up the rides to a good level, then the bleeds of the drums (e.g. kick/snare) become overpowering; when I try to tame those, the cymbals end up sounding a bit naff.
I know you can turn down/off the bleeds in SD3, or do a dedicated ride mic (which is what I've been doing so far); I'm always happy to learn new techniques though, so happy to receive any drum mixing advice.

If available, demo/walkthrough videos are a big clue. Sometimes the product descriptions will say things like 10,000 samples, deep-sampled, or 5 round-robins for multi-sampled instruments.
Generally, the orchestral/piano/guitar/voice ones are multi-sampled; the Hybrid Tools series are more loop based.

As we've mentioned other drum software, does anyone find that the ride in SD3 (that by default is only captured by the overhead mic) is very quiet? I know you can modify the mics and assign a dedicated ride mic, but it seems a little strange to me to have this as a default setup. Disclaimer: I've never mic'ed up a real drumset so if this is how you might typically do the mics, I'm happy to stand corrected.

Sounds very cool - are the whispers separate instruments/patches, or are they baked into the vocals?

Does how you draw have any effect on the sound? e.g. does left/right affect panning, or does drawing faster/slower affect pitch? Are the rendered .wav files mono, or stereo?

Does anyone have any of their post-2018 orders showing up on JRR yet? I saw somewhere that they said they're slowly being restored, but it'd be interesting to know if anyone here has had theirs restored yet.

It's in the RX Post Production Suite 4 bundle, though at $1,999, there are quite a few things above it on my wishlist. In fact, there are so many things above it that it's fallen off my wishlist; not to say it's no good - just to much for me to justify.
