There is software that will read all of the MIDI messages coming from a device. If you are using a DAW, you may have to pair what you want to do with a knob or button on the device. Look for ¨learning MIDI messages¨ or something like that in the manual. If you are familiar with MacOS programming, I have some code I have been playing with. All of those knobs are probably sending control change messages on one of the channels.
Look at the Korg and Samson websites. I seem to recall something there on using DAW´s with the devices and it would be the same method as dealing with yours.
