inserted plugins

In the photo below I highlighted where it shows that there is only one plugin per track, when there are actually several plugins on those tracks.  How do I make all the plugins visible?

Use your mouse and click on the small white bar just above the FX and drag it up. You will see the rest of your plugins. You can do the same on the sends by clicking and dragging up to reveal any sends you have (reverb/Delay etc)

So, it no longer expands automatically when inserting new ones?  Or is there a setting to alter that function?

Yes. In the Track View> Display>Module Options UNCHECK Allow Module Resizing. There is a similar setting in the Console View Options. I don't know the maximum number of FX it will show but it will show more than the default setting will allow.
