Hi

Many SI-instrument  are installed with cakewalk DAW.

As the

SI-string

SI-drum

1) How many stereo audio channels can be provided by SI-string?

2) How many mono/ stereo audio channels can be provided by SI-drum?

3)  If two violins, one viola, one cello are inserted data into ST-string instrument,

How to setup the audio track output for each strings instrument?

Of course one may have multiple instances of the plug-ins.

If there are many instances of the plug-ins does are they all at the same volume and pan settings or can they be independently controlled?

It depends on the routing and the volume and pan control in question.

There are a couple of ways to use a single MIDI track and route the data to multiple synths. In this case, MIDI volume and pan may be shared. 

However if each instrument has its  own instrument or audio+MIDI track pair and plug-in then nothing is shared.
