From what I've gathered, those early 1960's Dylan tracks where recorded live in the studio all in one shot, through a single microphone. Any perceived effects where probably due to microphone placement more than anything else. Dylan's initial "purest folk period" was all about the lyric, the music and recordings that followed were no more than a vehicle to convey his observations. Experiment with both dynamic and condenser mikes, shouldn't be to hard to replicate.
