So my question is: do you really ever find time to use all of the 40,000+ plugins that you have... or do you just collect for the fun of it??

I've only got about 300 VSTi's... and still haven't applied a bunch of 'em yet.

Excellent question. I have used quite a few but certainly not all. I acquire to 'have it just in case'.
