If I change it, the notes also change, is there a way to not have that happen, so I can create variations of the music.

Cakewalk staff view is very limited and is not really intended to be used in any advanced scoring. 
Its main use is for people who would rather work in this domain than Piano Roll for editing.

What you are seeking goes under the names of Sibelius, Dorico, MuseScore, or Finale.

I found that there is a transpose MIDI plugin in Cakewalk, I can now create variations. and I came to Cakewalk, as Musescore is too limited, and made for a more real world environment, I am trying to compose music you would find in video games.
