Just been looking for an answer to the same question, and came across yours. Hope you found an answer in the last 5 years! But just in case, I think I have one...
Cakewalk can assign MIDI buttons to keyboard shortcuts.
In Matrix mode, the left and right cursor buttons move between columns (and if you've got the header highlighted, between whole columns). Then the enter button triggers that cell/column.
If you assign one foot button to act as the right cursor (and another to left if you have enough buttons), then another as ENTER, you should be able to do it.
