I see the balanced cable as a fix to the problem. The balanced circuit and cable still gets noise, but the signal gets inverted on one wire before the cable, and then re-inverted after the cable. The hum interference is induced in both wires during the cable run and when the sum is re-inverted at the end the signal is strengthened and the hum cancels itself out.

That's simplified, and I don't know if I'm explaining it in a way that's easy to understand.

The important thing to know is that if a balanced option is offered by your gear, use it.
