  1. To me, a composer is someone who writes musical phrases for one or more instruments and puts them together to form a piece of music. A producer is someone who takes a composed piece of music and targets it for the application: maybe suggest some additional percussion if it's for an action piece; maybe strip it back a little for something emotional; maybe add some special reverb in places for epicness.

  2. I find the treble clef easier to read as well, but that might be to do with the fact that I first learned to read music that used the treble clef exclusively. Thing is though, the centre 'spiral' of the treble clef doesn't just denote the line its on to be G, it means it's the G above middle C: two staffs using the treble clef (even if glued together) would suggest that both melodies should be played in the same octave, although you could use the octave modifier.

    Looks like whatever's being 'recorded' would benefit best from having absolutely no cables in the setup; including from the mixer to the DAW

    Agree with the comment above. I'm not an Apple fan and I don't have an iPhone, but iPhones are made in China and (for reasons I don't fully understand) generally considered extremely desirable.
